Raw Vegan Key Lime Pie

This is another delicious and nutritious recipe shared with me by a friend. The reason why I love raw vegan desserts is because they can be made quickly and easily, without compromising on flavour or feeling too guilty. The ingredients used here are all clean, healthy and natural, but you really wouldn’t think so. The base is nutty and chewy, resembling your favourite cheesecake. That intense, but refreshing lime flavour really brings forth memories of summer, sipping on citrus-heavy cocktails in outdoor restauraunt seating, with a gorgeous, light dessert to top off an exceptional meal.

As long as you have a food processor, you can make this dessert, and the many variations that come with it. The image below contains all of the ingredients you will need, it really is that simple.


For the base:

120g of dates
75g of walnuts
1/2 juice of lime

For the filling:

75 grams of cashews (ideally soaked overnight in water)
1 large avocado
1 1/2 juice of lime
100g of dates

Whizz up the base ingredients in the food processor until they stick together. Then, spoon out the mixture into 4-6 small ramekins.

Do the same with the filling ingredients, until smooth and creamy. Then, spoon out this mixture on top of the bases and place into the fridge to set for about 2 hours.

  1. I’ve always wanted to try key lime pie but didn’t because of my allergies. I’ll have to try this! And I can substitute nuts for pumpkin seeds. Thanks for posting

    • That’s brilliant! I’m so glad to have helped with a recipe for you. The nuts just help with adding some crunch to the base, and the cashews help with making the topping taste creamy, but the avocado is creamy enough that I doubt you’d miss it in there. Please let me know how it goes.
